I have been trying to limit/eliminate breads and pastas from my diet. I love carbs, and the thought of the plain, lack of taste alternatives that I have seen, makes me cringe. Spaghetti and meatballs are one of my favorite things to eat. I have tried the whole wheat pasta, and just can't stomache the graininess of the pasta.
That's when I thought of eggplant.
I peeled one eggplant, and cut it the long way into fours. Then, all I did was run the four pieces one a t a time through my juilenne slicer.
Place all the eggplant into a frying pan, add 1 tablespoon of minced garlic, 1 teaspoon of grated parmesan, and drizzle extra virgin olive oil. Saute until all the eggplant is soft.
Plate, and add your sauce and meatballs! This was probably one of the best healthy alternative dishes I have ever made!
