I was recently sent a sample of Bertolli's Extra Light Olive Oil to try out. Well, we've been using it now for just over a week, and really it hasn't left my counter in that time.
I have been loving the versitity and light taste of this olive oil. Being able to use olive oil in my frying of chicken has greatly increased our weekly menus. I'm a lover of Chicken Marsala, but I am not a huge fan of using all the vegetable oil. Having tried Betolli Extra Light Olive Oil in my Chicken Marsala was a huge hit with the whole family.
Since Bertolli Extra Light Olive Oil doesn't carry a heavy olive taste, it's also a great alternative to butter or margerine when baking!

Here's a quick and easy recipe from Chef Fabio Viviani,
Chef Fabio Viviani’s Creamy Apple Walnut Chicken Salad Recipe
Prep Time: 15 minutes
Cook Time: 10 minutes
4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
1 Tbsp. Bertolli® Extra Light™ Tasting Olive Oil
¼ cup lowfat sour cream
1 Tbsp. fresh lemon juice
1 tsp. stone ground mustard
2 apples, cored and cubed in bite-size pieces
2 ribs celery, thinly sliced diagonally
½ cup chopped Walnuts
1 Tbsp. chopped chives
Season chicken with salt and ground black pepper. Heat Bertolli Extra Light Tasting Olive Oil in 12-inch nonstick skillet over medium-high heat and cook chicken, turning once, about 10 minutes or until chicken is thoroughly cooked. Cool chicken completely and cut into bite-size pieces.
Combine sour cream, mustard, and lemon juice in medium bowl. Stir in chicken, apples, celery, walnuts and chives. Serve cold. Serve, if desired, with crusty Italian bread or over greens.
